Place apples, apple cider, brown sugar, lemon juice and apple pie spice in large saucepan. Cook on medium heat 20 to 25 minutes or until apples are tender, stirring occasionally.
Preheat oven to 325°F. Spoon applesauce into food processor or blender container; cover. Puree until smooth. Pour into 2-quart baking dish. Stir in vinegar and salt.
Bake 1 hour or until dark brown and thickened, stirring halfway through cooking. Store in refrigerator.
