Preheat oven to 425°F. Mix oregano, paprika, thyme, sea salt and garlic powder in small bowl. Set aside.
Toss potatoes with oil in large bowl. Sprinkle seasoning mixture over potatoes. Toss to coat well. Spread potatoes in single layer on foil-lined 15x10x1-inch baking pan.
Bake 30 to 35 minutes or until potatoes are tender and golden brown.
Wonderful and healthier then mashed potatoes cant wait to go cook a pan up . Lol

Never any leftovers. I add an onion coarsely chopped and the 2 tbsp olive oil is perfect to coat all. I then dump it all on a sheet of heavy duty foil and top with same crimping edges and cook this on the grill also. Same timing, just flip 1/2 way thru. The 2lb recipe is perfect for a 2lb bag of baby reds.

I think this is an excellent side dish. I made 3 lbs of potatoes and there were 5 people at dinner. I thought we would have tons of leftovers, but they were the first thing gone! This is a fantastic alternative to buttery, creamy potatoes as the olive oil and spices are just as good but less fattening! Thanks!
