INSTRUCTIONS

  • 1 Preheat oven to 400°F. Place potatoes directly on oven rack. Bake 45 to 50 minutes or until tender.
  • 2 Meanwhile, brown meat in large skillet on medium-high heat. Drain fat. Stir in Seasoning Mix and water. Bring to boil. Reduce heat to low; simmer 5 minutes, stirring occasionally.
  • 3 Remove potatoes from oven. Carefully slit top of potato with a small knife. Pinch ends gently to open potato. Spoon about 1/3 cup of the meat mixture onto each potato. Serve with desired toppings, such as shredded cheese, shredded lettuce, sour cream, chopped tomato or avocado, hot sauce, or green onions.

Test Kitchen Tip: For a quick weeknight meal using leftover taco meat, pierce potatoes as directed, then pop in the microwave two at a time. Microwave on HIGH 3 to 4 minutes, then flip and microwave 3 to 4 minutes longer or until potatoes are tender.
