Ingredients

  • White Wedding Cake
  • 2 1/2 cups flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups sugar
  • 1 cup vegetable shortening
  • 1 tablespoon McCormick® Clear Vanilla Flavor
  • 1 1/2 cups milk
  • 4 egg whites
  • Frosting
  • 1 cup vegetable shortening
  • 1 teaspoon McCormick® Clear Vanilla Flavor
  • 1 package (16 ounces) confectioners' sugar, sifted
  • 2 to 3 tablespoons milk

INSTRUCTIONS

  • 1 For the Cake, preheat oven to 325°F. Mix flour, baking powder and salt in small bowl. Set aside. Beat sugar and shortening in large bowl with electric mixer on medium speed until light and fluffy. Stir in clear vanilla flavor. Gradually add flour mixture alternately with milk, beating on low speed after each addition until smooth, starting and ending with flour.
  • 2 Beat egg whites in a separate large bowl with electric mixer on medium-high speed until stiff peaks form. Add batter mixture to egg whites, one-third at a time, stirring gently to combine. Divide batter evenly between 2 greased (9-inch) round cake pans.
  • 3 Bake 30 to 35 minutes or until toothpick inserted into center comes out clean. Remove from oven. Cool in pans 10 to 20 minutes. Remove from pans; cool completely on wire rack.
  • 4 For the Frosting, beat shortening in large bowl with electric mixer on medium speed until creamy. Mix in clear vanilla flavor. Gradually beat in confectioners' sugar, 1 cup at a time, on low speed until well blended. Add milk; beat on medium speed until light and fluffy. If frosting is too thick to spread, gradually beat in additional milk. Test Kitchen Tip :

    For buttery frosting flavor, substitute 1/2 cup (1 stick) butter, softened, for 1/2 cup of the shortening in the frosting recipe.

  • 5 To frost cake, place one cake layer on a cake platter. Spread top of cake with frosting. Top with second cake layer. Frost top and sides of cake with remaining frosting.
