- Cook pasta in large saucepan as directed on package for al dente pasta. Add broccoli florets during last 3 minutes of cooking. Drain well. Set aside.
- Meanwhile, place cottage cheese, milk, Parmesan cheese, oregano, garlic, salt, pepper and crushed red pepper in blender container. Cover and blend just until smooth. Set aside.
- Heat oil in large deep skillet on medium heat. Add sausage; cook and stir until browned, about 3 to 5 minutes. Add sauce mixture from blender container to skillet, scraping down sides of container. Reduce heat to medium-low. Simmer 6 to 8 minutes, stirring occasionally, until heated through and sauce has thickened slightly. Add drained pasta and broccoli to skillet, tossing to mix well. Serve immediately sprinkled with additional grated Parmesan cheese, if desired.
Meal Prep Tip: Cook pasta and broccoli as directed, draining well. Blend sauce mixture and set aside. Brown Sausage in skillet; cool slightly. Divide pasta, broccoli, and sausage among 4 to 6 microwave-safe portion containers with lids. Spoon sauce mixture over top. Cover with lid and refrigerate up to 4 days. When ready to serve, loosen lid and microwave on HIGH 1 minute 30 seconds. Mix well and re-cover loosely. Microwave 30 to 60 seconds longer or until heated through. Add 1 tablespoon water, if needed to thin sauce.
