- Place chicken in 4-quart slow cooker. Whisk broth, honey, tomato paste, olive oil, chipotle chili powder, garlic powder, salt and pepper in small bowl until well blended. Pour half of the sauce mixture in slow cooker, stirring to coat chicken. Cover.
- Cook on HIGH for 4 hours or LOW for 6 hours, until chicken is cooked through. Transfer chicken to large bowl. Shred and keep warm.
- Meanwhile, whisk cornstarch and lime juice in small bowl. Stir into to reserved sauce mixture. Add sauce mixture to cooking liquid in slow cooker, mixing until well blended. Cover and cook on HIGH for 20 to 30 minutes or until sauce is thickened. Add shredded chicken to slow cooker with sauce, mixing to coat well.
- To assemble bowls, divide rice between 6 servings bowls. Top with Honey Chipotle Chicken. Layer with corn, tomato and pickled jalapeno. Dollop with crema and serve with lime wedges.
