1HEAT 1 tbsp. oil in nonstick skillet. Cook chicken 10 min. until browned, turning once.
2MIX remaining ingredients except cheese in measuring cup. Add to skillet and simmer 5 min. until chicken is no longer pink in center and sauce thickens slightly. Stir in cheese and cilantro, stirring until cheese melts.
3GARNISH with diced tomatoes or salsa, if desired.
