Chicken, Corn & Black Bean Quesadillas

Ingredients

  • 3 tablespoon French's® Honey Dijon Mustard Squeeze Bottle
  • 3 tablespoon light sour cream
  • 1 1/2 teaspoon chili powder
  • 2 cups cooked chicken breast
  • 1 cup frozen corn, thawed
  • 3/4 cup low sodium black beans
  • 2 med green onions, chopped
  • 1/2 cup reduced-fat Mexican blend shredded cheese
  • 4 (8 inch) whole wheat tortillas

INSTRUCTIONS

  • 1 BLEND mustard, sour cream and chili powder in medium bowl. Stir in chicken, corn, black beans and green onions.
  • 2 SPREAD about 1 cup mixture on one-half of each tortilla. Sprinkle each with 2 tbsp. cheese. Fold tortillas in half.
  • 3 COOK in hot nonstick skillet or grill pan, coated with nonstick spray, for 5 min., turning halfway during cooking. Cut in half to serve. If desired, serve with fresh salsa.
