- 4 cups fresh strawberries, hulled and halved
- 2 teaspoons McCormick® All Natural Pure Vanilla Extract
- 1/3 cup sugar
- 1/2 teaspoon McCormick® Ground Cinnamon
- 1/4 teaspoon McCormick® Ground Ginger
- Spiced Shortcakes
- 1 1/2 cups baking mix
- 3 tablespoons sugar
- 3/4 teaspoon McCormick® Ground Cinnamon
- 1/4 teaspoon McCormick® Ground Ginger
- 6 tablespoons milk
- 2 cups prepared whipped cream or whipped topping

Instructions
- Preheat oven to 425°F. For the Strawberry Filling, mix strawberries and vanilla in large bowl. Sprinkle with sugar, cinnamon and ginger; toss to coat well. Spoon into small glass baking dish or pie plate, scraping down sides of bowl, as needed. Set aside.
- For the Shortcakes, mix baking mix, sugar, cinnamon and ginger in large bowl. Add milk; stir to form a soft dough. Shape dough mixture into 6 balls. Place dough balls on foil-lined baking pan sprayed with no stick cooking spray. Flatten dough gently to about 1/2-inch thick.
- Place shortcakes and strawberries in oven. Bake shortcakes 10 to 12 minutes or until golden brown. Roast berries 15 to 20 minutes, or until softened and slightly jammy, stirring halfway through.
- Allow shortcakes and berries to cool. Split shortcakes and serve layered with jammy strawberries, drizzling with any remaining juices from baking dish. Top with whipped cream to serve.
Homemade Vanilla Whipped Cream: Beat 2 cups heavy cream, 1/4 cup confectioners’ sugar, and 2 teaspoons McCormick® Pure Vanilla Extract in large bowl with electric mixer on high speed until soft peaks form.
