- Preheat oven to 400°F. Rub pork tenderloin with 2 tbsp. of the Seasoning Mix. Place in center of large shallow foil-lined sheet pan sprayed with no stick cooking spray.
- Mix sweet potatoes, onions and oil in bowl. Add remaining Seasoning Mix; toss to coat well. Arrange around pork on sheet pan.
- Bake 30 minutes or until pork is desired doneness and sweet potatoes are tender. Slice pork and serve with sweet potatoes and onions.
Test Kitchen Tips:
- Substitute red potatoes, white potatoes or butternut squash for the sweet potatoes.
- Try using a medium apple, cut into thin wedges in place of the onion.
- Prefer chicken? Try substituting boneless chicken thighs or boneless chicken breasts for the pork tenderloin. Bake until chicken is cooked through.
