- Preheat oven to 225°F. Line two large baking sheets with parchment paper. Set aside. Place freeze dried blueberries and granulated sugar in food processor. Process until blueberries are ground into a fine powder. (Sift, if needed, to remove any large pieces or stems.) Place in small bowl. Add Finishing Sugar, stirring to mix well. Set aside.

Place egg whites, cream of tartar and salt in clean, grease-free bowl of stand mixer fitted with whisk attachment. Beat on low speed until foamy. Increase speed to high. Gradually add sugar mixture, about 1 tablespoon at a time, beating until sugar is completely dissolved and stiff peaks form.
Tip: To test if sugar has dissolved, rub a small amount of sugar between your thumb and finger. If mixture is still gritty, continue mixing until dissolved.
- Transfer meringue to piping bag fitted with a large star tip or tip of your choice. Pipe 1 1/2- to 2-inch swirls onto prepared baking sheets about 1/2-inch apart (meringues will not spread).
- Bake 1 hour. Turn off oven, but do not open. Let meringues stand in oven until cool, about 1 hour. Remove from baking sheets and cool completely.
