- Place tomatoes in mesh strainer over medium bowl. Sprinkle with salt, tossing gently to mix. Let stand 30 minutes. Meanwhile, mix remaining ingredients in large bowl. Set aside.
- Place 1 1/2 cups of the tomatoes in food processor. Pulse just until smooth. Add pureed tomatoes to bowl with remaining ingredients. Add remaining tomatoes, stirring to mix well.
- Serve immediately or store in airtight container in refrigerator up to 1 week.
