  1. Place saffron threads and hot water in small dish. Steep 10 minutes. Pat chicken dry and place in large baking dish; Set aside.
  2. In a large bowl, whisk yogurt, lime juice, 3 tablespoons of the olive oil, saffron (including steeping liquid), garlic powder, paprika, cinnamon, 1 teaspoon salt and pepper until well blended.
  3. Pour sauce mixture evenly over chicken, coating evenly. If time allows, refrigerate 1 hour or up to overnight to marinate. (If marinating, remove chicken from refrigerator and let stand at room temperature 30 minutes before roasting.)
  4. Preheat oven to 425°F. Toss potatoes with remaining 1 tablespoon oil and 1/2 teaspoon salt in large bowl. Arrange around chicken in baking dish.
  5. Roast 40 to 50 minutes, or until chicken is golden brown, internal temperature reaches 165°F and potatoes are tender. Transfer chicken to clean cutting board and let rest 10 to 15 minutes before carving. Toss potatoes in cooking juices before serving alongside chicken. 

Not sure how to spatchcock (or butterfly) a whole chicken? Pat chicken dry and place breast-side down on a clean cutting board. Using sharp kitchen shears, carefully cut along both sides of the backbone and remove it from the chicken. Flip the chicken over and press down on breast to flatten it out. This helps ensure even cooking, crispy skin all over, and helps shorten the cooking time a little!
