  • 1 pound Denver steak - Substituteshanger or top sirloin steak
  • 2 to 3 teaspoons McCormick® Chili Garlic Seasoning, divided
  • Kosher salt and McCormick® Black Pepper Grinder, to taste
  • 2 tablespoons oil, divided
  • 2 tablespoon unsalted butter, divided
  • 1 small shallot, finely chopped
  • 1 1/2 cups orzo pasta
  • 1/2 cup dry white wine, optional
  • 3 to 4 cups chicken broth
  • 1/2 cup freshly grated Parmesan
  • Juice and zest of 1/2 lemon
  • Finely chopped parsley

Instructions

  1. Pat steaks dry with paper towels and coat on all sides with Seasoning, salt and black pepper. Let stand 30 minutes at room temperature.
  2. Heat 1 tablespoon of oil in large heavy-bottom skillet on medium-high heat until shimmering. Sear steaks in hot skillet, cooking 2 to 3 minutes per side.. Reduce heat and add butter. Baste steak for the last few minutes with liquid in pan. Remove from skillet. Transfer to clean cutting board. Tent with foil and let rest 5 to 10 minutes. 
  3. Swipe out pan with paper towels. Reduce heat to medium. Add remaining oil, shallot and 1 teaspoon of Seasoning. Cook until shallots are translucent, about 3 minutes. 
  4. Stir in orzo. Let toast until lightly browned. Add white wine; cook and stir until wine has reduced by half. Add chicken broth; mix well. Bring to simmer. Cook for 15 to 20 minutes or until orzo is tender, stirring occasionally. Add additional stock if necessary.
  5. Reduce heat to low. Stir in remaining butter, Parmesan, lemon juice and zest. Taste and adjust seasoning with additional salt, black pepper and Seasoning, if desired.
  6. To serve, slice steak across the grain into thin slices. Divide orzo between serving plates. Top with steak and parsley. Sprinkle additional Parmesan cheese, if desired.
