  1. Preheat oven to 425°F. Mix Seasoning Mix and breadcrumbs in shallow dish. Brush chicken with oil. Coat evenly on both sides with bread crumb mixture. Discard any remaining coating mixture. Arrange chicken in single layer on large shallow foil-lined pan sprayed with no stick cooking spray.
  2. Bake 10 minutes or until chicken is cooked through. Remove from oven. Spoon salsa evenly over chicken. Sprinkle with cheese. Bake 5 minutes longer or until cheese is melted. Serve with additional toppings, if desired, such as sour cream, sliced avocados and chopped cilantro.

Split chicken breasts in half horizontally, like you're butterflying them, but cut all the way through to separate into two pieces of even thickness.
