- For Spicy Ranch, mix all ingredients in a small bowl until well blended. Cover. Refrigerate until ready to serve.
- For Buffalo Pimento Cheese Bites, mix together cheeses, cream cheese, buffalo sauce, pimentos, mayonnaise, garlic powder, salt and black pepper in a large bowl.
- Scoop pimento mixture with a 1-ounce (#30) ice cream scoop or tablespoon and roll into balls. Place on sheet tray. Cover with plastic wrap. Freeze 1 hour.
- Meanwhile, pour the oil into large deep skillet or Dutch oven. Heat on medium heat to 350°F.
- Place flour, eggs and breadcrumbs in separate small bowls. Roll pimento bites in the flour. Then dip in egg mixture, shaking gently to remove excess. Then roll in breadcrumbs to coat. Repeat until all pimento bites are coated.
- Working in batches, gently place pimento bites in hot oil, being sure not to over-crowd the oil. Cook until crispy and golden brown, about 4 minutes per side. Transfer to paper towel-lined plate or wire rack to drain. Serve with Spicy Ranch.
