Ingredients

  • 1 cup plain nonfat yogurt
  • 1/2 cup Thai Kitchen® Thai Kitchen® Gluten Free Unsweetened Coconut Milk
  • 1 cucumber, peeled, halved, seeded and cut into 1/4-inch dice
  • 2 tablespoons lime juice
  • 1 tablespoon palm sugar or granulated sugar
  • 2 green onions, thinly sliced
  • 1/4 cup finely chopped cilantro
  • 1/4 cup finely chopped fresh mint or basil

Instructions

  • MIX all ingredients in medium bowl until well blended. Cover.

  • REFRIGERATE at least 1 hour to blend flavor.
