BRING water to boil in medium saucepan. Reduce heat to medium-low.
STIR in rice and kaffir lime leaves. Cover and simmer 15 to 20 minutes or until rice is tender, stirring occasionally.
REMOVE from heat. Let stand 5 minutes. Remove kaffir lime leaves before serving.
MAKES 3 cups or 6 (1/2-cup) servings.
