YOU WILL NEED
1 pkg. McCormick® One Seasoning Mix, divided
1 pork tenderloin, about 1 lb.
2 medium sweet potatoes, peeled and cut into 1-inch cubes
1 medium onion, cut into thin wedges
1 Tbsp. oil
1. Preheat oven to 400degF. Rub pork tenderloin with 2 tbsp. of the Seasoning Mix. Place in center of large shallow foil-lined sheet pan sprayed with no stick cooking spray.
2. Mix sweet potatoes, onions and oil in bowl. Add remaining Seasoning Mix; toss to coat well. Arrange around pork on sheet pan.
3. Bake 30 minutes or until pork is desired doneness and sweet potatoes are tender. Slice pork and serve with sweet potatoes and onions.
