Ingredients 5 Servings

  • 1 small eggplant, cut into 1-inch chunks
  • 1 small red bell pepper, cut into 1-inch chunks
  • 1 small yellow squash, cut into 1-inch chunks
  • 1 small zucchini, cut into 1-inch chunks
  • 2 tablespoons vegetable oil
  • 1 tablespoon OLD BAY® Classic Seafood Seasoning

INSTRUCTIONS

  • 1 Toss vegetables with oil and OLD BAY in large bowl.
  • 2 Place vegetables in grill basket, grill rack or thread onto skewers.
  • 3 Grill over medium heat 12 to 15 minutes or until vegetables are tender, turning occasionally.
