This sweet & tangy stir-fry is an easy dish to prepare on a hectic weeknight. Substitute cooked rice or other tiny pasta for the couscous.
- 1 Prepare couscous according to package directions. Keep warm.
- 2 Heat 1 tablespoon oil in large nonstick skillet over medium-high heat. Stir-fry chicken in batches 5 to 10 minutes until or until browned. Transfer to bowl. Drain fat.
- 3 Heat 1 tablespoon oil in same skillet until hot. Stir-fry vegetables 3 minutes until crisp-tender. Return chicken to skillet. Stir in 2/3 cup water, mustard and barbecue sauce. Heat to boiling, stirring often. Serve over couscous.
