1PREHEAT oven to 350°F. Brown ground beef in large skillet and drain. Stir in 1/2 cup Mustard, 1/2 cup Ketchup and relish and bring to a boil over high heat. Reduce heat and simmer 3 minutes. Stir in tomato and 1 cup cheese.
2COMBINE enchilada sauce with remaining Mustard and Ketchup. Spread 1/2 cup sauce over bottom of 12 x 8-inch baking dish. Divide ground beef mixture evenly among tortillas and roll up.
3ARRANGE tortillas, seam side down, in baking dish and pour remaining sauce over tortillas.
4BAKE covered, 20 minutes. Uncover, sprinkle with remaining cheese and bake 5 minutes or until cheese is melted.
