Preheat oven to 400°F. Mix mashed potatoes, egg, 1 cup of the cheese, flour, half of the Crispy Jalapeños and green onions in large bowl.
Spray mini muffin pans with no stick cooking spray. Fill cups with potato mixture. Top each cup with remaining cheese and Crispy Jalapeños.
Bake 15 to 20 minutes or until set and tops are golden brown. Let stand in pan 2 minutes before serving.
