- Heat oil in large skillet on medium heat. Add vegetables; cook and stir 5 minutes or until tender-crisp.
- Stir in Sauce Mix, water and tomato paste until well blended.
- Bring to boil. Reduce heat to low; cover and simmer 10 minutes, stirring occasionally.
- Serve over pasta or veggie noodles and sprinkle with grated Parmesan cheese, if desired.
