  • 1 package McCormick® Perfect Roast Chicken & Vegetables Seasoning Mix
  • 3 tablespoons oil
  • 4 bone-in, skin-on chicken thighs
  • 3 cups assorted fresh vegetables, cut into 1-inch chunks

Simply mix with oil, toss with bone-in or boneless chicken and fresh veggies like potatoes, carrots, or onions, and roast to perfection.  

Instructions

  1. Preheat oven to 400°F. Mix Seasoning Mix and oil in large bowl.
  2. Add chicken and vegetables; toss to coat. Arrange in single layer on large, shallow, foil-lined baking pan sprayed with no stick cooking spray.
  3. Bake 35 to 40 minutes or until chicken is cooked through and vegetables are tender.

Test Kitchen Tips:

  • Use vegetables such as potatoes, carrots, sweet potatoes, butternut squash or red onion wedges.
  • Substitute boneless chicken for the bone-in chicken. Bake 25 minutes or until cooked through.
