  • 1 package McCormick® Cheesy Chicken & Rice Seasoning Mix
  • 1 pound boneless chicken breast or thighs, cut into 1-inch cubes
  • 3/4 cup uncooked long grain rice
  • 1 1/2 cups water or chicken stock
  • 1 cup milk
  • 2 cups fresh broccoli florets
  • 1 cup shredded Cheddar cheese

Instructions

Preheat oven to 400°F. Place chicken and rice in 2-quart baking dish sprayed with no stick cooking spray.

Whisk water, milk and Seasoning Mix in medium bowl until well blended. Pour over chicken and rice. Cover with foil.

Bake 40 minutes. Remove foil. Stir in broccoli. Sprinkle evenly with cheese. Bake, uncovered, 20 minutes longer or until rice has absorbed most of the liquid and broccoli is tender.

Test Kitchen Tips:

  • Substitute frozen broccoli for the fresh broccoli; no need to thaw!
  • Substitute any variety of shredded cheese in place of the Cheddar.
