  • 2 cups rigatoni pasta - Substitutespenne pasta
  • 1 tablespoon oil
  • 1 pound boneless chicken breasts, cut into strips
  • 1 can (14 1/2 ounces) petite diced tomatoes, undrained
  • 1 cup heavy cream - Substituteshalf-and-half
  • 1/4 cup grated Parmesan cheese
  • 1 package McCormick® Creamy Tuscan Chicken & Pasta Seasoning Mix
  • 2 cups baby spinach leaves

  1. Cook pasta as directed on package. Drain well.
  2. Meanwhile, heat oil in large skillet on medium-high heat. Add chicken; cook and stir 5 minutes or until browned and cooked through. Remove from skillet.
  3. Add tomatoes, cream, Parmesan cheese and Seasoning Mix to skillet, stirring to mix well. Bring to gentle boil, whisking constantly until well blended. Reduce heat to low; simmer 5 minutes. Return chicken to skillet. Stir in pasta and spinach. Cook 2 minutes longer, just until spinach is wilted. Sprinkle with additional Parmesan cheese to serve, if desired.
