  • 3 pounds russet potatoes, peeled and cut into 1-inch cubes
  • 2 teaspoons kosher salt, divided
  • 3/4 cup half-and-half
  • 8 tablespoons (1 stick) unsalted butter
  • 1/2 teaspoon McCormick® Pure Ground Black Pepper
  • 4 ounces (1 cup) shredded sharp Cheddar cheese
  • 1/2 cup sour cream
  • 3 tablespoons Gourmet Garden™ Green Onion Paste
  • 6 sliced bacon, crisply cooked and crumbled

Instructions

  1. Place potatoes and 1 teaspoon of the salt in a large saucepot. Add enough water to cover potatoes. Bring to boil on high heat. Reduce heat; simmer 8 to 10 minutes or until fork tender. Drain. Return potatoes to saucepot. Mash with potato masher until mostly smooth.  

  2. Mix half-and-half, butter, remaining 1 teaspoon salt, and black pepper in small saucepan. Heat on medium heat, stirring constantly, until butter has melted. 

  3. Add the warm half-and-half mixture, cheese, sour cream, green onion paste and bacon to the potatoes. Stir until well blended. Transfer to a serving bowl and sprinkle with additional shredded cheese and crumbled bacon, if desired.
