  • 1/4 cup fresh lime juice
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons Gourmet Garden™ Ginger Stir-In Paste
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 2 ripe mangoes, peeled, seeded and chopped
  • 2 medium sweet onions, peeled and chopped
  • 3 tablespoons finely chopped fresh mint
  • 2 pounds skin-on salmon fillets
  • Lime wedges (optional)

  1. Mix lime juice, lemon juice, Ginger Paste, olive oil and honey in small bowl until well blended. Stir in mango and onion to coat. Cover and refrigerate at least 1 hour or until ready to serve.
  2. Preheat grill for indirect medium heat. Grill salmon, skin-side down, over indirect heat 16 to 18 minutes or until fish flakes easily with a fork.
  3. Stir mint into mango salsa. Spoon salsa over salmon to serve.
