- 2 tablespoon olive oil
- 3 medium carrots, trimmed, peeled, and chopped
- 2 medium leeks, trimmed, white parts chopped, rinsed well
- 1 tablespoon Gourmet Garden™ Ginger Stir-In Paste
- 2 teaspoon Gourmet Garden™ Garlic Stir-In Paste
- 4 cups chicken broth
- 1/2 cup water
- Greek yogurt, if desired

Instructions
- Heat oil in a large saucepan over medium heat. Add carrots and leeks and cook for 15 minutes, stirring often, or until veggies are softened.
- Add Gourmet Garden Ginger Stir-In Paste and Gourmet Garden Garlic Stir-In Paste and cook for 1 minute or until fragrant.
- Add chicken broth and bring to a boil. Reduce heat to low and simmer 15 minutes or until vegetables are tender. Blend soup until smooth.
- Add ½ cup water and return to a simmer. Serve soup in bowls topped with Greek yogurt, if desired.
