Melt 3 tablespoons of the butter in large oven-safe skillet on medium-high heat. Add onion paste, cook and stir 1 to 2 minutes until fragrant.

Add remaining 1 tablespoon butter and mushrooms to skillet. Cook and stir 5 minutes or just until softened. Add pasta, stock and cream. Bring to boil. Reduce heat to medium-low. Simmer 15 minutes or just until pasta is al dente. Stir in 1 cup of the cheese. Sprinkle remaining 1 cup cheese over top.

Transfer skillet to oven. Broil 3 to 5 minutes or just until cheese is bubbly and lightly browned. Sprinkle with Chives to serve.
