Instructions
- Preheat oven to 350°F. Heat tomato sauce and water in small saucepan until simmering. Stir in Seasoning Mix and bring to boil. Simmer 5 minutes or until thickened slightly.
- Spray 13x9-inch baking dish with no stick cooking spray. Mix chicken, 1 cup of the cheese, 2 tablespoons of the cilantro and 1/4 cup of the prepared sauce in medium bowl. Arrange 1/2 cup of the chicken mixture down the center of each tortilla. Roll up tortillas to enclose filling. Place seam-side down in prepared baking dish. Spoon remaining sauce over top of enchiladas to cover evenly. Sprinkle with remaining 1 cup cheese. Cover with foil.
- Bake 20 minutes or until sauce is bubbly and cheese is melted. Sprinkle with remaining cilantro to serve.
