Prepare Jambalaya Mix as directed on package, using ham in place of the smoked sausage
Preheat oven to 350°F. Mix eggs and half-and-half in large bowl until well mixed. Add cheese, bell pepper and onions; mix until well blended. Set aside. Spread rice mixture evenly in bottom of greased 13x9-inch baking dish. Pour egg mixture over top
Bake 30 minutes or until eggs are set. Let stand 5 minutes before serving
Agree with the previous review, additional 15/20 minutes was needed to finish cooking. I think next time I won't use as much half and half. I think it made it too watery not to mention added a lot of unwanted calories. All in all it was very good, very cheezy!

This is a great dish - easy and tastes great! I made it to bring into work. The only substitution I made was that I used some fully-cooked andouille sausage instead of ham, just for that extra cajun kick. The instructions also say to "Bake 30 minutes or until eggs are set." ... I found that after 30 mins, the edges were cooked but the eggs in the middle were still soupy. It took another 20 mins of baking for them to set up to my liking. I will definitely make this again!
