- 1 cup sugar
- 3/4 cup rice vinegar
- 2 tablespoons water
- 2 teaspoons salt
- 3 cups peeled, seeded and sliced cucumbers
- 1/2 cup thinly sliced shallots
- 1/4 cup sliced red chiles
INSTRUCTIONS
- 1 BRING sugar, vinegar, water and salt to simmer in medium saucepan on medium heat, stirring until sugar is dissolved. Set aside to cool.
- 2 ADD cucumbers, shallots and chiles. Let stand 20 minutes to marinate. Or, cover and refrigerate overnight.
