Spicy Cucumber Salad

INGREDIENTS

Ingredients

  • 1/3 cup rice vinegar
  • 2 tablespoons sugar
  • 2 tablespoons fresh lime juice
  • 1 1/2 teaspoons Thai Kitchen® Gluten Free Premium Fish Sauce
  • 4 cucumbers, peeled, seeded and thinly sliced
  • 1/2 cup thinly sliced red bell pepper
  • 1/2 cup thinly sliced red onion
  • 2 Thai chilies, halved lengthwise
  • 1 tablespoon chopped fresh cilantro

INSTRUCTIONS

  • 1 Mix vinegar, sugar, lime juice and Fish Sauce in large bowl.
  • 2 Add cucumbers, bell pepper, onion and chilies. Toss gently to coat. Sprinkle with cilantro. Cover.
  • 3 Refrigerate 1 hour or until ready to serve. Stir before serving.
