1Rub beef roast with Spice Pack from Stubb's Hatch Chile Cookin' Sauce kit. Place roast in slow cooker and add Cooking Sauce from Stubb's Hatch Chile Cookin' Sauce kit. Cover and cook on HIGH for 4 to 6 hours or LOW for 8 to 10 hours. Drain liquid from slow cooker. Shred beef with forks; discard fat.
2Combine broth, Finishing Sauce from Stubb's Hatch Chile Cookin' Sauce kit, hominy, tomatoes and shredded beef in large stock pot; bring to a boil. Reduce heat and simmer for 30 to 40 minutes.
3Spoon soup into bowls. Serve with toppings, if desired.
