The Bacon Onion Ring, 'Oinkion'

  • 1 Make sure and use a sweet yellow onion for this recipe. The sweet flavor pairs well with the spicy sauce and bbq rub.  Peel the onion prior to slicing. Cut the onion into thick 1/2 inch pieces and make sure you do not break the rings. Separate into thick rings making sure to leave 2 rings per portion. A double ring is necessary during the cooking process to maintain stability.  Lightly brush each onion with Stubbs Spicy BBQ Sauce. Wrap the double rings with bacon and secure with a skewer or toothpick. I like to use bacon with a medium thickness. Each OINKION will require 2 - 3 strips of bacon. Once wrapped and secured, sprinkle with Stubb’s Bar-B-Q Rub.
  • 2 Set your grill/smoker up for indirect heat. We are looking for an internal grill temperature of 300 degrees. You can also use the oven for this recipe. If you are using the smoker or grill, add some pecan wood chunks for another level of great flavor. Any fruit wood will work, but pecan or apple are my favorites. If you are using the oven, place rings on a baking rack so they are not cooking in grease. This will ensure a crispy bacon onion ring. Cook for 60 - 90 minutes or until the bacon is cooked to your liking. I prefer a crispy OINKION, so I go for 90 minutes. Once they are nicely browned and crispy, you can enjoy as is. If you want to add a little extra flavor, brush each ring with some Sweet Chili Sauce and cook for an additional 5 minutes. The sweet chili sauce will thicken and create a nice sauce for the OINKION.
