For the Hot Chocolate, place milk and granulated sugar in medium saucepan. Bring to simmer on medium heat, stirring to dissolve sugar.
Remove from heat. Stir in chocolate with wire whisk until melted. Stir in food color and vanilla. Pour into serving cups. Serve with marshmallows and Vanilla Whipped Cream, if desired.
For the Vanilla Whipped Cream, beat heavy cream, confectioners’ sugar and vanilla in medium bowl with electric mixer on high speed until stiff peaks form.
Agreed, cream cheese aspect was missing. I found this: Cream Cheese Whipped Cream - 2 oz cream cheese, 1/3 c sugar, 2 c heavy whipping cream, 1 tsp vanilla extract. Whip cream cheese & sugar on low (hand mixer, but on med with a stand mixer). Add the vanilla & whipping cream. Gradually increase the speed to high. Once it gets fluffy, watch for it to get stiff & look almost dry. Stop at this point or else it will seperate into buttermilk & butter.

Tasty, but its just red hot chocolate. It's missing the cream cheese component that makes something truly "red velvet".
