- 1 whole chicken, 2 1/2 to 3 pounds
- 3 tablespoons olive oil
- 1 tablespoon McCormick Gourmet™ All Natural Tarragon
- 2 tablespoons minced garlic
- 1/2 teaspoon McCormick Gourmet™ Organic Coarse Ground Black Pepper
- 1/4 teaspoon salt
- 1 pound cherry tomatoes, halved
- 8 small shallots
INSTRUCTIONS
- 1 Preheat oven to 375°F. Place chicken, breast side up, on rack in shallow roasting pan. Mix oil, tarragon, garlic, pepper and salt in medium bowl. Add tomatoes and shallots; toss to coat. Remove tomatoes and shallots. Set aside. Brush the chicken with remaining oil mixture
- 2 Roast 1 to 1 1/4 hours or until chicken is cooked through. During last 25 minutes of roasting, arrange shallots around chicken in pan. During the last 10 minutes of roasting, arrange tomatoes around chicken in pan
- 3 Remove tomatoes, shallots and chicken from the roasting pan. Cover chicken; let stand 10 minutes before carving. Serve chicken with shallots and tomatoes
