- 4 salmon fillets (6 ounces each)
- 1 cup Stubb's® Original Barbecue Sauce
- 1 tablespoon maple syrup
- 1 cup cubed cantaloupe
- 1 cup cubed pineapple
- 1 medium green pepper, diced
- 1 1/2 teaspoons olive oil
- 2 cup cooked white rice
- McCormick® Parsley Flakes, to serve
- Lemon wedges, to serve

- Mix Bar-B-Q Sauce and maple syrup until well blended. Brush over each fillet. Marinate in refrigerator 30 minutes to 1 hour.
- Meanwhile, toss fruit and green pepper with olive oil in a small bowl. Place in center of a sheet of heavy-duty foil, folding to enclose mixture in a foil packet. Set aside.
- Preheat grill on medium-high heat. Grill salmon about 6 minutes per side or until fish flakes easily with a fork, brushing with additional Bar-B-Q Sauce, if desired.
- Grill fruit packet alongside salmon for about 10 to 15 minutes or until tender.
- Serve the salmon over cooked rice, sprinkled with parsley and topped with grilled fruit salsa. Serve with lemon wedges, if desired.
