  • 1/4 cup all-purpose flour
  • 1 egg
  • 1/4 cup plain dry breadcrumbs
  • 1/4 cup Panko breadcrumbs, lightly crushed
  • 1/4 cup plus 2 tablespoons grated Parmesan cheese, divided
  • 1 tablespoon McCormick® Savory Herb Parmesan Seasoning
  • 1 pound thin-sliced boneless skinless chicken breasts
  • 3 tablespoons oil, divided
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat oven to 350°F. Place flour in shallow dish. Lightly beat egg in a separate shallow dish. Mix both breadcrumbs, Parmesan cheese, and Seasoning in a third shallow dish. Dip chicken in flour, followed by egg, and then breadcrumb mixture, coating evenly on both sides and pressing to adhere. Set aside. 
  2. Heat 2 tablespoons of oil in large skillet on medium-high heat. Cook chicken in batches 3 to 4 minutes per side or until golden brown. Add remaining 1 tablespoon oil, as needed. Transfer chicken to foil-lined 13x9-inch baking pan. Spoon marinara sauce evenly over chicken. Sprinkle with mozzarella cheese and remaining 2 tablespoons of Parmesan cheese.
  3. Bake 5 to 10 minutes or until cheese is melted. Serve with cooked spaghetti and garden salad, if desired.
