- Preheat oven to 425°F. Pat pork dry with paper towels. Rub with 1 tablespoon of the Seasoning. Heat oil in large oven-safe skillet on medium heat. Cook pork until well browned on all sides, about 4 to 6 minutes. Transfer pan to oven.
- Roast 12 to 15 minutes or until internal temperature registers 140°F. Transfer to cutting board and tent loosely with foil; let rest 5 minutes.
- Return skillet to stovetop. Add broth and bring to boil. Reduce heat to medium; simmer 4 to 6 minutes or until thickened, stirring occasionally. Add any juices from cutting board and cream to skillet; simmer until sauce is slightly thickened, about 2 to 3 minutes longer. Stir in mustard and remaining 1 teaspoon Seasoning. Remove from heat. Slice pork and serve with pan sauce.
