Place 1 tortilla on a clean work surface. Cut tortilla from center of circle down, slicing only to bottom edge of tortilla. Dividing the tortilla into 4 quadrants, place about 2 tablespoons of cheese on both top and bottom right quadrants. Spoon 1/4 cup sauce onto bottom left quadrant. Arrange 4 pepperoni on top right quadrant. Sprinkle with 1/2 teaspoons of the Italian seasoning.

Starting from bottom left, fold tortilla up to top left, then over to top right, then down to bottom right, to form a triangle. Repeat with remaining tortillas and filling. Brush tortillas lightly with olive oil on both sides.

Heat a large nonstick skillet on medium high heat. Add tortilla wraps to pan. Cook about 5 minutes per side or until browned. Let stand 5 minutes before serving. Serve with ranch dressing, if desired.
