  • Moroccan Cauliflower
  • 2 cups small cauliflower florets
  • 1 tablespoon vegetable oil
  • 1 teaspoon McCormick® Moroccan Style Seasoning
  • Couscous
  • 1 tablespoon butter
  • 1 cup couscous
  • 1 cup water
  • 1 cup low-sodium chicken broth - Substitutesvegetable broth
  • 1/4 cup currants
  • 4 teaspoons McCormick® Moroccan Style Seasoning
  • 1/2 teaspoon salt
  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 1 medium carrot, shredded

Instructions

  1. Preheat oven to 425°F. For the Moroccan Cauliflower, evenly coat cauliflower with oil and Moroccan Seasoning on a large foil-lined baking sheet. Arrange in single layer. Roast for 25 minutes or until lightly browned. Stirring halfway through cooking. Set aside. 
  2. Meanwhile, for the Couscous, heat butter in medium saucepan over medium-high heat. Add couscous and cook, stirring frequently, until grains are just beginning to brown, about 5 minutes. 
  3. Add water, broth, currants, Moroccan Seasoning and salt. Briefly stir to combine. Cover and remove from heat. 
  4. Let stand until couscous is tender, about 10 minutes. Uncover and fluff couscous with fork. Stir in chickpeas and carrots. Serve with Moroccan Cauliflower and warm flatbread, if desired.
