- Preheat oven 425°F. Pat chicken dry with paper towels.
- Brush chicken evenly with oil. Rub all over with Seasoning Mix. Place on a rack in roasting pan. Add enough water to fill about 1/2-inch.
- Roast 10 minutes. Reduce oven temperature to 350°F. Tent with foil. Roast about 1 hour or until chicken is cooked through (internal temperature of breast should reach 165°F and thigh should reach 180°F).
