- Core tomatoes and cut off rounded top and bottom. Slice tomatoes into ⅛- to ¼-inch-thick slices. Line rimmed baking sheet with paper towels. Place tomatoes on prepared baking sheet and sprinkle both sides with sugar and 1 teaspoon salt. Cover tomatoes with double layer of paper towels and let sit for 1 hour.
- Meanwhile, mix all ingredients for the Dipping Sauce in small bowl, whisking until well blended. Cover. Refrigerate until ready to serve.
- Whisk flour, breadcrumbs, garlic powder, onion powder, smoked paprika, and remaining 1 teaspoon salt together in large bowl. Beat eggs together in separate shallow dish. Transfer tomatoes to flour mixture and toss to coat.
- Remove remaining paper towels from baking sheet and wipe dry. Working with 1 slice at a time, dip tomatoes in egg, allowing excess to drip off, and return to flour mixture, pressing firmly so coating adheres. Return tomatoes to baking sheet.
- Add oil to large skillet and heat over medium-high heat to 350°F. Working in batches as needed, fry tomatoes until golden and crispy, about 2 minutes per side. Remove the tomatoes from the oil and place on a plate lined with paper towels or wire rack. Serve with Dipping Sauce.
