  1. Core tomatoes and cut off rounded top and bottom. Slice tomatoes into ⅛- to ¼-inch-thick slices. Line rimmed baking sheet with paper towels. Place tomatoes on prepared baking sheet and sprinkle both sides with sugar and 1 teaspoon salt. Cover tomatoes with double layer of paper towels and let sit for 1 hour.
  2. Meanwhile, mix all ingredients for the Dipping Sauce in small bowl, whisking until well blended. Cover. Refrigerate until ready to serve.   
  3. Whisk flour, breadcrumbs, garlic powder, onion powder, smoked paprika, and remaining 1 teaspoon salt together in large bowl. Beat eggs together in separate shallow dish. Transfer tomatoes to flour mixture and toss to coat.
  4. Remove remaining paper towels from baking sheet and wipe dry. Working with 1 slice at a time, dip tomatoes in egg, allowing excess to drip off, and return to flour mixture, pressing firmly so coating adheres. Return tomatoes to baking sheet.
  5. Add oil to large skillet and heat over medium-high heat to 350°F. Working in batches as needed, fry tomatoes until golden and crispy, about 2 minutes per side. Remove the tomatoes from the oil and place on a plate lined with paper towels or wire rack. Serve with Dipping Sauce.
