For the Zucchini Roll, preheat oven to 400°F. Line 12×17-inch rimmed baking sheet with parchment paper. Sprinkle shredded Parmesan cheese onto baking sheet in a thin, even layer. Arrange zucchini slices in single layer over cheese, placing so that they are not totally overlapping but right next to one another. Brush zucchini with olive oil, then sprinkle evenly with Salad Supreme Seasoning.
- Bake for 15 to 18 minutes or until golden brown and crispy, rotating the pan halfway through.
- For the Tzatziki Sauce, whisk all ingredients in small bowl until well blended. Set aside until ready to serve.
- Meanwhile, for the Chicken, season chicken with Salad Supreme, tossing to coat well. Heat olive oil in a large skillet over medium-high heat. Once the pan is hot, add chicken. Cook and stir 8 to 10 minutes until cooked though and golden brown. Set aside and keep warm.
- Remove zucchini wraps from oven. Cool 2 minutes before assembling wraps. (Allow to cool for just 2 minutes - don't wait too long because the zucchini sheet will harden, and you won't be able to roll it).
- To assemble the wraps, flip the zucchini sheet over so the cheese side is up and short side is facing you. Spoon Tzatziki Sauce across wrap. Add chicken, tomatoes and onion. Sprinkle with parsley and top with more tzatziki.
- Roll to enclose filling, starting from the short side of the wrap and rolling tightly. Reposition the roll on the baking sheet so that the seem side is down and tucked under the roll. Slice and serve!
