- 1 medium onion, chopped
- 1 medium carrot, peeled & chopped
- 1 celery stalk, chopped
- 1 red bell pepper, seeded & chopped
- 1 cup lentils
- 2 tablespoon Gourmet Garden™ Garlic Stir-In Paste
- 2 tablespoon Gourmet Garden™ Cilantro Stir-In Paste
- 1 tablespoon Gourmet Garden™ Parsley Stir-In Paste
- 1/2 teaspoon salt
- 2 quarts (8 cups) low sodium vegetable broth

- Heat oil in stock pot over medium high heat. Add onion, carrot, celery and red bell pepper; cook until vegetables have softened, about 8 minutes.
- Add lentils, Gourmet Garden Garlic Stir-In Paste, Gourmet Garden Cilantro Stir-In Paste, Gourmet Garden Parsley Stir-In Paste, and salt. Cook 1 minute, stirring constantly.
- Add vegetable broth. Bring to a boil; reduce heat to low and simmer for 25 minutes, stirring occasionally or until lentils are tender.
