Cochinita Pibil, or Yucatan Pork, is an easy-to-prepare braised pork dish hailing from the Yucatan Peninsula. This version comes together in the Instant Pot® with fresh orange and lemon juices, Cholula® Sweet Habanero Hot Sauce and McCormick® herbs and spices. Serve shredded pork in warm corn tortillas with pickled red onions and your favorite Cholula® Salsas and Hot Sauces.

Key products

  1. Place orange juice, lemon juice, Hot Sauce, onion, achiote paste, garlic, cloves, oregano, cumin, allspice, cinnamon, peppercorns and 2 teaspoons of the salt in large food processor or blender container. Cover and process until mixture is a smooth paste. Set aside.
  2. Sprinkle pork with remaining 2 teaspoons of the salt. Heat oil in Instant Pot on SAUTE setting. Add pork; brown on all sides. Turn off Instant Pot; stir in seasoning paste mixture and water. Close lid. Set valve to seal.
  3. Set to cook for 1 hour on HIGH PRESSURE (MANUAL). When done, quick release the pressure. Let pot stand 5 minutes. Open lid once pressure inside pot is completely released. (Check manufacturer's manual for safe operating instructions.)
  4. Remove pork from pot using slotted spoon, reserving cooking liquid. Shred pork and stir in reserved cooking liquid. Serve in warm corn tortillas and top with pickled red onions, Cholula Salsa and more Sweet Habanero Hot Sauce, if desired.


Tips:

  • For more robust flavor, lightly toast spices and seasonings in a small skillet just until fragrant. Then blend with remaining ingredients for paste mixture.
  • Use this Cochinita Pibil to top panuchos.
