- 1/4 cup vegetable oil
- 1/2 cup finely chopped white onion
- 1/2 cup Cholula® Original Hot Salsa
- 5 large eggs
- 2 teaspoons Cholula® Original Hot Sauce
- Cholula® Cilantro Lime Cremosa Sauce

Instructions
- Cut each tortilla into 8 wedges. Set aside.
- Heat oil in large deep skillet on medium-high heat until shimmering. Place tortillas in oil in single layer. Fry until golden brown and crispy on both sides, stirring occasionally, about 3 minutes. Remove tortillas using slotted spoon; transfer to paper towel-lined plate. Keep warm.
- Add onion and Original Hot Salsa to same skillet. Cook and stir on medium heat until onion is softened, about 3 minutes.
- Whisk eggs and Original Hot Sauce in medium bowl. Pour into skillet and stir gently until set, about 2 - 4 minutes. Add tortillas, stirring gently to mix.
- Drizzle with Cilantro Lime Cremosa, and serve topped with chopped tomato, chopped avocado, cilantro and crumbled queso fresco, if desired.
